A fruity cabbage salad with blueberries from Spoonsparrow is always delicious!
Ingredients
- 500 g red cabbage (0.25 lb)
- Salt
- 1 tart apple
- 250 g blueberries
- 2 tbsp Apple cider vinegar
- 2 tbsp lemon juice
- 4 tbsp apple juice
- 1 tbsp Maple Syrup
- Pepper
- 1 tbsp Rapeseed Oil

Wash the cabbage, remove the core, finely shred it, mix with 1 tsp salt and combine well. Let it sit for 15–20 minutes, stirring occasionally.

Meanwhile wash the apple, quarter it, core it, and slice into thin strips.

Gently rinse the berries and pat them dry.

Whisk together vinegar, lemon juice, apple juice, maple syrup, pepper, and oil to make the vinaigrette.

Combine the cabbage with the vinaigrette, apple slices, and blueberries; season with salt and pepper. Then divide into four glasses.
