The salad bowl with quinoa and strawberry dressing from Spoonsparrow contains plenty of vital nutrients and tastes simply great.
Ingredients
- 150 g quinoa
- Salt
- 1 large carrot
- 150 g cherry tomatoes
- 50 g mixed greens
- 125 g strawberries
- 2 sprigs lemon thyme
- 2 tbsp olive oil
- 1 tbsp Lemon Juice
- 1 tsp Mustard
- 1 tsp Honey
- Pepper
- chili flakes
Instructions

Rinse the quinoa and cook it in double the amount of salted water for about 15–20 minutes over medium heat, then let it cool.

Meanwhile peel and grate the carrot. Wash and halve the tomatoes. Rinse the greens, shake dry and tear into small pieces.

Clean the strawberries, wash them and cut into small cubes. Wash the thyme, shake dry and pluck the leaves. Whisk together oil, lemon juice, mustard and honey. Fold in the strawberries and season with salt, pepper, thyme and chili.

Arrange the ingredients in two bowls. Serve the salad bowls drizzled with the dressing.
