Ingredients
- 100 g pistachios
- 1 Vanilla bean
- 250 g mascarpone
- 5 tbsp powdered sugar
- 20 ml Grand Marnier
- 3 tbsp orange juice
- 2 tbsp Lime juice
- 100 ml whipped cream (at least 30% fat content)
- 500 g melon flesh (e.g., honeydew and watermelon)
- 20 ripe strawberries
- 4 small nectarines

Finely chop the pistachios. Slice the vanilla bean lengthwise and scrape out the seeds. Mix mascarpone with pistachios, vanilla seeds, and powdered sugar. Stir in Grand Marnier, orange juice, and lime juice. Whip the cream until stiff peaks form and fold into the mascarpone mixture.

Cut melon flesh into bite‑size cubes. Wash, pit, and dry strawberries. Wash nectarines, halve them, remove pits, and cut flesh into strips. Thread fruit alternately onto 10 wooden skewers and serve with pistachio dip.
