Fruit Sheet Cake

Ingredients
- 250 g soft butter
- 1 pinch salt
- 250 g sugar
- 4 eggs
- 1 untreated orange (juice and zest)
- 2 tsp Baking powder
- 400 g flour
- 100 g ground almonds (peeled)
- 100 ml milk
- 400 g red currants
- 500 g mirabelles
- 60 g pine nuts
- powdered sugar (for dusting)
Instructions

Preheat the oven to 180°C with top and bottom heat. Line a baking sheet with parchment paper.

Beat the butter, salt, and sugar until fluffy. Gradually add the eggs, beating until creamy. Stir in orange juice and zest. Mix the baking powder with flour and almonds, then alternately fold into the cream with milk, creating a smooth, spreadable batter. Spread it evenly on the sheet.

Rinse and pat dry the currants and mirabelles. Remove stems from currants and pit the mirabelles. Evenly distribute them over the batter and bake for about 45 minutes (test with a skewer). Sprinkle pine nuts during the last 10 minutes.

Remove from oven, let cool, dust with powdered sugar, cut into pieces, and serve.
