- 100 g long-grain rice
- 1 Vanilla bean
- 0.375 l milk (1.5%)
- 400 g mirabelles
- 50 g butter
- 125 g sugar
- 0.5 lime (zest and juice)
- 3 eggs
- 300 g Low-fat quark
- 100 g dried sour cherries
- 50 g cornstarch
- 1 tsp Baking powder

Slice the vanilla bean lengthwise, scrape the seeds into the milk, bring everything with the rice to a boil. Simmer on low heat for 20 minutes, let it cool lukewarm, then remove the vanilla bean. Wash and halve the mirabelles, pit them. Whisk softened butter with sugar, lime juice and zest until frothy.

Separate the eggs; whisk the yolks into the sugar mixture. Fold in the rice porridge and quark spoonfuls with the dried sour cherries. Beat the egg whites very stiffly, fold into the batter. Sift together the cornstarch and baking powder over the meringue, then gently mix everything.

Line a springform pan with parchment paper, pour half of the batter in, smooth it out, top with mirabelles, then evenly spread the remaining batter on top. Bake at 180 °C for about 75 minutes, cool, then release from the pan.
