Fruit Salad with Walnuts

A fresh fruit salad featuring mangoes, apples, lychees, raisins and walnuts in a bright citrusy glaze. Enjoy this and other recipes from Spoonsparrow!

Ingredients

  • 200 ml red grape juice
  • 3 sheets gelatin
  • 2 mangos
  • 2 Apples
  • 50 g Raisins
  • 12 lychees
  • 20 g chopped walnut kernels
  • 2 tbsp Maple syrup
  • 40 ml rum (optional)
  • 2 tbsp Lime juice

Instructions

    Soak the gelatin in cold water. Squeeze out excess liquid, warm with grape juice in a saucepan and dissolve. Pour into a shallow dish lined with plastic wrap and chill for at least 2 hours. Then break apart, remove the wrap and cut into cubes.

    Peel the mangos, separate flesh from pits and cube. Wash apples, quarter them, remove cores and cube as well. Rinse raisins and soak in rum.

    Peel lychees and remove pits. Combine all fruit with walnuts, maple syrup and lime juice in a bowl; let sit for about 30 minutes. Serve garnished with the gelatin cubes.
