Fruit Salad with Gel Cubes

Ingredients
- 600 ml fruit juice (e.g., kiwi, peach, grapefruit juice)
- honey (to taste)
- 1 tsp agar-agar
- 3 peaches
- 200 g strawberries
- 2 passion fruits

Bring each fruit juice to a boil (sweeten with honey if desired) and stir in one-third of the agar-agar. Cook while stirring for 1–2 minutes until dissolved. Test setting by dropping a few drops onto a cold plate; if it does not set, add more agar-agar. Pour juices into shallow molds lined with plastic wrap and chill for at least 4 hours. Once fully cooled and firm, remove from molds, peel off the wrap, and cut into cubes.

Wash, pit, or core peaches and strawberries and chop them small. Halve passion fruits and scoop out the pulp. Arrange chopped fruit and gel cubes in cups, then spoon over the passion fruit pulp.
