Fruit Salad with Celery Stalks

Ingredients
- 2 untreated oranges
- 1 apple (e.g., Boskop)
- 4 celery stalks
- 1 Kiwi
- 60 g peeled walnut kernels
- 300 g natural yogurt
- 5 tbsp sour cream
- 1 tbsp walnut oil
- Salt
- pepper (to taste)
- 4 crispbread slices
- 100 g low-fat quark

Peel the oranges, removing the white pith as well; separate the fruit segments from the membranes and catch the juice. Peel the apple, quarter it, remove the core, dice into small cubes, and mix with a bit of orange juice. Wash, trim, and cut the celery into diagonal thin slices. Peel, quarter, and slice the kiwi thinly.

Coarsely chop the walnuts and toast them in a hot pan without added fat. Remove and set aside. Whisk the yogurt with sour cream, oil, and 2 tbsp orange juice; season with salt and pepper. Spoon the yogurt into bowls, mix the celery with half of the orange segments, apple, kiwi, and walnuts, and arrange on top.

Spread quark onto a crispbread slice and top with the remaining orange segments. Serve both together on a plate.
