Ingredients

  • 375 g flour
  • 1 pinch salt
  • 200 g cold plant fat
  • 1 egg
  • 6 tbsp ice water
  • 2 apples (sour)
  • 1 tbsp Lemon Juice
  • 150 g Strawberries
  • 300 g raspberries (frozen)
  • 100 g gelatin sugar (3:1)
  • 1 tbsp Cornstarch

Instructions

    Preheat the oven to 200-220°C.

    For the pie crust, mix flour with salt, add fat and crumble with a fork until fine crumbly mixture forms. Combine egg and ice water, quickly stir into flour with fork, turn dough onto lightly floured surface and knead by hand. Divide dough into two portions and chill for 30 minutes. Then roll each between two sheets of plastic wrap or parchment paper slightly larger than the pie tin and refrigerate again.

    Peel apples and cut into pieces, mix with lemon juice. Wash, trim, and quarter strawberries. Thaw raspberries and combine with apple pieces, strawberries, cornstarch, and gelatin sugar.

    Line the pie tin with one dough circle, let edges overhang. Spoon berry mixture on top. Place second dough circle over filling and press down the excess edge. Punch 1-2 holes in the top to allow steam escape during baking.

    Bake in oven for 30-45 minutes until golden yellow.

    Remove from oven and serve warm or cold.
