Fruit Layered Dessert with Apple Sauce

Ingredients

  • 3 sheets white gelatin
  • 100 ml strawberry juice
  • 150 ml sparkling wine
  • 2 tart apples (e.g., Granny Smith)
  • 4 tbsp Lemon juice
  • 2 tbsp sugar
  • 1 pinch Ground cinnamon
  • 0.25 pineapple
  • 1 Banana
  • 4 tbsp whole, unpeeled almond kernels

Instructions

    Soak the gelatin in cold water. Warm the strawberry juice gently in a saucepan, squeeze out excess water from the gelatin and dissolve it in the juice—do not boil!

    Once the mixture starts to set, add the sparkling wine, pour into glasses, and chill until firm.

    Peel the apples, quarter them, remove cores, and dice finely. In a pot, bring lemon juice, sugar, and cinnamon to a boil; simmer 5–8 minutes over medium heat, then puree, transfer to a bowl, and let cool.

    Peel the pineapple, cut out the tough core, and chop into bite‑sized pieces. Peel the banana and slice thinly.

    Toast the almonds in a dry pan without oil, remove, cool, and pulse finely in a food processor.

    Spread the apple sauce over the strawberry layer, arrange pineapple chunks and banana slices on top, and sprinkle with toasted almonds before serving.
