Orange Cake

- 200 g Flour
- 1 pinch salt
- 75 g sugar
- 125 g butter
- 1 egg
- butter (for the pan)
- 5 eggs
- 150 g sugar
- 3 oranges
- 1 lemon
- 150 g flour
- powdered sugar (for dusting)

For the base, sift the flour onto a work surface, mix with salt and sugar, then press a well in the center. Cut the cold butter into small pieces and distribute around the well; add the egg to the center and use a knife to cut through all ingredients until small dough crumbs form. Quickly knead by hand into a dough that no longer sticks to your hands. Adjust flour if necessary. Shape the dough into a ball, wrap in cling film, and chill for about 30 minutes.

Preheat the oven to 180 °C fan.

Roll out the dough thinly. Butter the pan, line with dough, shaping an edge. Blind bake in the oven for about 20 minutes.

For the topping, whisk the eggs with sugar until creamy. Wash citrus fruits hot and dry; grate the zest of one lemon and one orange. Squeeze all fruit juices and add the zest. Alternately fold in flour into the egg mixture. Spread over the pre-baked dough and bake for another ~30 minutes.

Let cool in the pan, dust with powdered sugar, and serve.
