Fruit Cake

- 250 g flour
- 125 g butter
- 125 g sugar
- 1 egg
- juice of one lemon
- 1 kg mixed fruit (such as grapes, cherries, plums, apricots)
- 3 eggs
- 70 g sugar
- 125 g sour cream

Sift the flour onto a work surface, press a well in the center, add sugar, egg and lemon juice. Place butter pieces on the rim, quickly combine and knead into dough. Shape into a ball, wrap in foil and refrigerate for 30 minutes.

Roll out the dough on a floured surface, place it in a pan, form a rim and prick several times with a fork. Wash, trim fruit; pit cherries, halve plums, remove seeds, and spread fruits over the base.

Separate the eggs for the glaze. Whisk egg whites until stiff peaks form. Beat yolks with sugar until creamy, fold in sour cream, then gently fold in the meringue. Pour over the fruit and bake at 170 °C for about 20 minutes.
