Ingredients

  • 80 g soft butter
  • 80 g sugar
  • 80 g fine wheat semolina
  • 500 g low‑fat quark
  • 1 tsp cinnamon
  • 1 tsp Baking powder
  • 3 tart apples
  • 3 large eggs
  • Butter for greasing

Instructions

    Separate the eggs. Using an electric hand mixer, beat together butter, sugar, cinnamon and egg yolks into a fluffy mixture. Mix baking powder with semolina and fold into the batter, then add the quark. Whisk the egg whites with a pinch of salt until stiff peaks form and gently fold into the mixture.

    Grease a casserole dish with butter and pour in the quark mixture. Peel, halve, core and cut the apples into wedges. Press the wedges into the quark batter and optionally top with small butter shards. Cover the dish with foil. Place it in a cold oven set to 220 °C and bake on the middle rack for about 60 minutes.
