Grilled Pineapple with Lemon Sorbet

- 250 g sugar
- 0.5 Pineapple
- 150 g crème fraîche
- 2 EL honey
- 2 EL Butter
- 1 EL chopped almond kernels
- 4 balls lemon sorbet
- nectarine slices for garnish
- fresh mint for garnish

Bring the sugar together with 40 ml water in a pot without stirring to boil and reduce to golden yellow. Using a fork, lay it on a sheet of parchment paper in a grid pattern and then let cool. Carefully break the grid into pieces and detach from the parchment.

Peel, clean and cut pineapple into sticks. Whisk crème fraîche with honey until smooth. Heat butter in a pan and lightly brown the pineapple sticks.

Spread almonds as base for ice balls on plates. Arrange pineapple sticks as grid on plates, place ice on almonds and spread crème fraîche around ice and pineapple. Garnish with nectarine slices and mint. Place caramel grids over the ice.
