Fruit and Meat Skewers with Spinach Veggies
Fruit and meat skewers with spinach vegetables is a perfect after-work recipe – quick to make, healthy and made with fresh ingredients.
Ingredients
- 600 g Spinach
- Salt
- 1 Garlic clove
- 2 red onions
- 2 tbsp sesame oil
- 2 tbsp sesame seeds
- Salt
- Lemon juice
- 500 g pork tenderloin
- 2 Apricots
- 1 red chili pepper
- 2 tbsp Vegetable oil
- Salt
- 1 tbsp honey

Wash, trim and briefly blanch the spinach in salted water. Shock in cold water and squeeze out excess moisture. Peel the garlic and onions; finely chop the garlic and halve the onions into strips. Sauté in hot sesame oil for 1–2 minutes. Mix in the garlic, sesame seeds and spinach and steam for 2–3 minutes. Season with salt and lemon juice.

Cut the pork into bite‑sized slices. Halve the apricots, pit them and cut into wedges. Alternate meat and fruit on wooden skewers. Wash, trim and finely chop the chili pepper; mix with oil and brush over the skewers. Sprinkle with salt and sear in a hot pan for about 2 minutes per side. Finish by drizzling honey and letting it lightly caramelize. Serve arranged over spinach and garnish with fresh herbs as desired.
