Small Plum Cakes

- 500 g plums
- 5 mint sprigs
- 200 ml whipping cream
- 50 g powdered sugar
- 50 g ground almonds
- 1 egg
- 4 tsp sesame seeds

Mix flour, sugar and salt. Sprinkle butter in small pieces over the mixture and rub everything between your hands until it becomes a sandy consistency. Add the egg and 2-3 tbsp cold water and quickly knead into a smooth dough. Shape into a ball and wrap in cling film; refrigerate for about 1 hour.

Meanwhile wash, halve and pit the plums. Wash mint, pluck leaves from stems and finely chop. Whisk together cream, powdered sugar, almonds, mint and remaining egg.

Preheat oven to 180°C (350°F) with upper and lower heat. Butter six to eight small tart pans about 8 cm in diameter. Divide dough into quarters, roll each slightly larger than the pans on a floured surface and line the pans. Distribute plums in the pans and pour over the cream mixture. Bake in preheated oven for 25–30 minutes, sprinkling sesame seeds during the last 5–10 minutes.
