Ingredients

  • 6 Eggs
  • 150 g fine sugar
  • 1 packet vanilla sugar
  • a pinch of salt
  • 80 g corn starch
  • 45 g flour
  • 45 g cocoa powder
  • 20 g sunflower oil
  • 250 g QimiQ cream base or low‑fat cream cheese (with 3 packets thickening agent)
  • 300 g dark chocolate
  • 400 g whipping cream
  • 8 pear halves (canned or fresh)

Instructions

    Beat the eggs with sugar, vanilla sugar and salt on high speed for 7 minutes until frothy.

    Sift corn starch, flour and cocoa over the egg mixture and fold in. Finally, gently whisk in the oil.

    Pour the batter into a springform pan lined with parchment paper and bake for about 40 minutes at 180°C.

    Remove from oven and cool on a wire rack.

    For the filling, blend QimiQ or cream cheese until smooth. Melt the chocolate over a gentle water bath and stir into the cream mixture.

    Fold in the very stiff whipped cream.

    Cut the cake base in half horizontally. Place one layer of pear halves on the lower ring, fill with two thirds of the cream, top with the second layer, refrigerate for at least 2 hours. Decorate with remaining cream, chill another 2 hours. Slice the remaining pears into strips and garnish the cake just before serving.
