Frittierte Eier schmecken immer wieder gut, egal ob pur beim Picknick oder als Vorspeise. Probieren Sie das Rezept von Spoonsparrow!
Ingredients
- 4 hard boiled eggs
- 1 tbsp flour
- 1 egg
- 3 tbsp breadcrumbs
- 1 l frying oil
- 2 yolks
- 2 tsp mustard
- 1 tbsp Lemon Juice
- 250 ml plant oil
- 1 pickled cucumber
- 1 onion
- 2 tsp capers
- 0.5 bunch Parsley
- Salt
- Pepper

Peel the eggs and lightly dust them with flour. Beat the egg with a few drops of cold water, coat the floured eggs in it, then dredge them in breadcrumbs, ensuring the coating covers the whole egg. Fry in hot oil at 150°C for 3 minutes until light brown.

Serve the fried eggs with salad and remoulade.

For the sauce whisk yolks, salt, pepper, mustard, lemon juice; slowly drizzle in oil while continuously stirring. Peel the onion and finely chop it with the cucumber, fold into mayonnaise. Wash parsley, finely chop and add with capers, season with salt and pepper.
