Frittata with Smoked Salmon and Mascarpone

Ingredients

  • 8 eggs
  • 1 red chili pepper
  • 2 Potatoes
  • 3 spring onions
  • 300 g smoked salmon (sliced)
  • 2 tbsp plant oil
  • 2 tbsp butter
  • Salt
  • Pepper
  • 3 tbsp mascarpone (for garnish)

Instructions

    Wash the chili peppers, cut them lengthwise, remove seeds and white membranes, then dice finely. Slice the salmon into strips. Peel and grate the potatoes. Wash and trim the spring onions, cutting them into long strips.

    Heat oil and butter in two large non-stick pans. Briefly fry the grated potatoes with the chili in hot fat. Whisk the eggs, season with salt and pepper, pour over the potatoes in the pan. Distribute fish and spring onions on top of the eggs, stir slightly, cover and cook over low heat for about 8-10 minutes until set. Season with salt and pepper. Plate with a few dollops of mascarpone garnish and serve.
