Ingredients

  • 40 g fresh spinach leaves
  • 1 Shallot
  • 1 tomato
  • 2 Eggs
  • 2 tbsp milk
  • 1 tbsp butter
  • 1 tsp chives
  • Salt
  • black pepper (freshly ground)

Instructions

    Wash, trim, and dry the spinach. Peel and dice the shallot. Wash, quarter, core, and dice the tomato.

    Whisk the eggs with the milk. Heat the butter in a non‑stick skillet and sauté the shallot cubes. Add the spinach and let it wilt; sprinkle the tomato cubes on top and season with salt and pepper. Pour the egg mixture into the pan and cook over low heat for 1–2 minutes until set on one side.

    Sprinkle chives over the omelette, flip it, and cook for another 1–2 minutes until done. Serve immediately.
