Ingredients
- 150 g bacon
- 8 eggs
- 8 tbsp milk
- butter (for frying)
- 1 tbsp freshly chopped parsley
- 1 tbsp chives
- black pepper (freshly ground)

Slice the bacon into wide strips, fry in a hot pan until crisp, remove and drain on paper towels.

Beat two eggs with two tablespoons of milk in a bowl using a whisk. Heat a pan with a little butter, pour in the egg mixture. Cook over low heat, stirring with a spatula until the eggs begin to set. When the surface is moist and glossy, top with bacon, sprinkle parsley and chives, season with pepper, fold together and serve.
