Pancake Rolls with Apple, Peanut Butter and Nuts

Ingredients

  • 2 Eggs
  • 250 ml milk (3.5% fat)
  • 125 g flour (Type 1050)
  • 1 tbsp Raw cane sugar
  • 1 apple
  • 2 tbsp butter (for frying)
  • 100 g Peanut butter
  • 20 g chopped nuts

Instructions

    Whisk eggs, milk, flour and sugar into a smooth batter and let it rest for 20 minutes. Meanwhile peel, wash and finely grate the apple.

    Heat some butter in a pan and cook about eight thin pancakes from the batter (keep warm in the oven if desired).

    Spread peanut butter on each pancake, sprinkle with grated apple, roll up, dust with chopped nuts and serve.
