Ingredients
- 2 small zucchinis
- 1 clove garlic
- 1 tbsp freshly chopped thyme leaves
- 1 tbsp Olive Oil
- Salt
- pepper (ground)
- 4 eggs
- 4 tbsp heavy cream
- 40 g grated Parmesan

Wash the zucchini and cut into small pieces or slices. Peel and finely chop the garlic. Mix the zucchini with thyme leaves and garlic, then sauté in hot oil in a pan for 4-5 minutes, seasoning with salt and pepper.

Whisk the eggs with the cream, season with salt and pepper, pour over the zucchini mixture, cover and cook on low heat for 8-10 minutes until set. Flip the frittata using a large plate, sprinkle with parmesan, cover and bake for another 3-5 minutes until finished.

Cut into small squares for serving and skewer each piece with a wooden toothpick.
