Ingredients

  • 200 g leafy greens (e.g., arugula, dandelion, lamb's lettuce and young spinach)
  • 3 clementines
  • 2 tbsp Apple cider vinegar
  • 3 tbsp grape seed oil
  • 1 pinch sugar
  • Salt
  • Pepper
  • 1 Pomegranate
  • 100 g feta cheese
  • 2 tbsp pine nuts

Instructions

    Rinse the greens, pat dry, and tear into bite-sized pieces if desired.

    Peel two clementines and cut them into segments. Squeeze juice from the third fruit and whisk with vinegar and oil. Season with sugar, salt, and pepper.

    Halve the pomegranate and remove the seeds. Discard the white membranes.

    Combine all prepared salad ingredients loosely and arrange on plates. Crumble feta over the top, sprinkle pine nuts, and drizzle the dressing before serving.
