Frikadellen with Potato Rösti

Ingredients
- 350 g mixed ground meat
- 1 egg
- 1 loaf of bread (from yesterday)
- 1 bunch spring onions
- 1 bunch parsley
- 100 g Emmental cheese
- 2 plant-based oils
- 800 g waxy potatoes
- 1 onion
- 1 tbsp butter
- 1 tbsp oil
- 300 g mixed salad
- 2 tbsp white wine vinegar
- 6 tbsp plant-based oil
- 1 tsp Mustard
- Salt
- Pepper

Soak bread in lukewarm water. Trim and finely chop spring onions, then trim and finely chop parsley. Sauté both in 1 tbsp oil. Dice cheese small.

Squeeze bread well and mix with ground meat, egg, onion mixture, and cheese. Season with salt and pepper and shape into eight patties. Heat 1 tbsp oil and fry patties for 15 minutes on each side. Peel potatoes for the rösti, grate them. Peel onion, finely chop and sauté in butter and oil.

Add grated potatoes, press lightly, cook over medium heat until golden yellow, carefully flip and cook second side. Wash salad, tear into bite-sized pieces. Quarter tomatoes. Whisk vinegar, oil, mustard, salt, pepper into a dressing and drizzle over salad. Quarter rösti, serve with patties and salad.
