Fried Zucchini with Herb Quark

A fresh snack featuring sautéed zucchini served with a creamy herb quark dip, brought to you by Spoonsparrow.
Ingredients
- 500 g quark (20% fat)
- Salt
- ground pepper
- 1 bunch spring onions
- 4 tbsp mixed fresh chopped herbs (e.g., parsley, dill, tarragon, basil)
- 750 g Zucchini
- 4 tbsp oil
- 2 tbsp pumpkin seeds
- Salt
- ground pepper
Instructions

Whisk the quark until smooth. Season with salt and pepper.

Trim and wash the spring onions, then finely chop them. Fold into the quark along with the herbs.

Wash and trim the zucchini; cut lengthwise into quarters or eighths, then slice into ~4 cm pieces.

Heat 1 tbsp oil in a pan and toast the pumpkin seeds until golden brown. Transfer to a plate.

Add the remaining oil to the pan and sauté the zucchini for 2-3 minutes. Season with salt and pepper, add the toasted pumpkin seeds, and serve alongside the quark.
