Ingredients
- 750 g new potatoes
- salt, black pepper
- 400 g quark
- 125 ml milk
- 2 tbsp lemon juice
- 3 shallots
- 2 Garlic cloves
- 2 pickled cucumbers
- 1 bunch dill
- 8 matjes fillets

Wash the potatoes thoroughly and bring to a boil in salted water; cook for 20 minutes. Drain and peel the potatoes.

Whisk the quark with milk, salt, pepper, and 1 tbsp lemon juice. Peel the shallots and garlic, dice the pickled cucumbers, shallots, and garlic. Wash the dill, shake dry, pluck the fronds, and finely chop most of them leaving a few whole.

Fold the dill, shallots, and cucumbers into the quark mixture. Arrange the matjes fillets and potatoes on plates. Garnish the quark cream with dill fronds and serve alongside.
