Ingredients

  • 250 g cooked shrimp
  • 1 tbsp sherry
  • 1 tbsp light soy sauce
  • 1 tbsp Sesame oil
  • 2 tbsp starch
  • 2 egg whites
  • a pinch salt
  • a pinch cayenne pepper
  • 4 slices toast bread
  • 4 tbsp sesame seeds
  • oil (for frying)
  • sweet and sour chili sauce (for dipping)

Instructions

    Pat the shrimp dry with paper towels and chop. Add sherry, sesame oil, and starch, then roughly blend in a mixer. Whisk the egg whites until stiff and fold into the mixture, seasoning with cayenne pepper. Cut the toast bread diagonally to create triangles and spread the shrimp paste on them.

    Place sesame seeds on a plate and press the toasted bread onto them. Heat plenty of oil in a large pan, place the toast pieces with the sesame side down, and fry for about 2 minutes until golden brown. Drain on paper towels and serve warm with chili sauce.
