Beetroot Salad with Herb Quark

Beetroot salad with herb quark: beetroot is rich in positive nutrients such as B vitamins, potassium, iron and folic acid.

Ingredients

  • 0.5 tsp yellow mustard seeds
  • 150 g cooked beetroot (sealed; peeled)
  • Salt
  • Pepper
  • 1 stalk Parsley
  • 4 sprigs chives
  • 1 tbsp mineral water
  • 30 g low-fat quark (1.5 tbsp)

Instructions

    Crush the mustard seeds in a mortar or crush with the back of a large, heavy knife.

    Pat beetroot dry with kitchen paper and cut into long strips about 5 mm wide.

    Place in a bowl, mix with crushed mustard seeds, a pinch of salt and some pepper.

  4. 4.

    Wash herbs and shake dry. Pick parsley leaves and finely chop; slice chives into fine ribbons.

    Whisk both with mineral water and quark in a small bowl until smooth. Season with salt and pepper and serve with the salad.
