Ingredients
- 100 g wheat flour
- 100 g wheat starch
- 2 egg whites
- 0.5 tsp Salt
- pepper (ground)
- 1 l oil (for frying)
- 200 g skinless white fish fillet ready-to-cook, e.g., cod
- 1 baby fennel
- 250 g giant shrimp, deveined and peeled except tail segment
- 150 g surimi
Instructions

Sift the flour with the starch into a bowl. Add the egg whites, season with salt and pepper, and whisk briskly with a whisk. Pour about 300 ml cold water all at once and stir until a smooth batter forms.

Heat the oil in a pot or deep fryer to about 170°C (338°F).

Rinse the fish, pat dry, and cut into bite-sized pieces. Wash and trim the fennel, then slice finely. Rinse the shrimp and surimi and pat dry.

Dip portions of fennel and seafood into the batter, then fry each in the hot oil for 3–4 minutes until golden brown. Drain on paper towels and serve immediately.
