Fried Oyster Mushrooms with Herb Yogurt

- 0.5 bunch Basil
- 0.5 bunch Chives
- 0.5 bunch Parsley
- 600 g oyster mushrooms
- 200 g Flour
- 3 eggs
- 0.25 l milk
- 1 clove garlic
- Salt
- Pepper
- 500 g clarified butter (for frying)
- 300 g yogurt
- 2 tbsp lemon juice

Preheat the oven to 80°C.

Wash the herbs and dry them by shaking; remove stems and finely chop leaves. Remove stems from the mushrooms and clean caps with a kitchen towel. Coat mushrooms in half of the flour. Separate eggs; whisk yolks with remaining flour and milk in a bowl. Beat egg whites until stiff peaks form, then fold into yolk mixture. Mince garlic and fold in. Season with salt and pepper. Heat clarified butter in a pot, dip each mushroom in batter, and fry until crisp. Drain on paper towels and keep warm at 80°C. Mix yogurt with lemon juice and herbs; season with salt and pepper and serve alongside the mushrooms.
