Fried Sardines

Ingredients
- 800 g fresh sardines (ready to cook)
- Salt
- Pepper (freshly ground)
- flour (for coating)
- vegetable oil (for frying)
- 1 ripe tomato
- 2 Garlic cloves
- 2 sprigs parsley
- 3 tbsp olive oil
- lemon slices
Instructions

Peel, wash and pat the sardines dry. Heat oil in a deep wide pot until small bubbles rise on a wooden spoon handle. Season sardines with salt and pepper, coat in flour, tap off excess.

Fry portions for about 2 minutes each side until golden brown, turning during cooking. Keep fried fish warm at ~50°C on parchment paper in the oven.

Wash tomatoes, remove stems, blanch, peel, seed, and finely dice or chop. Peel garlic and finely dice as well.

Wash parsley, shake dry, pluck leaves, finely chop. Mix tomatoes with garlic, parsley, olive oil, salt, and pepper. Arrange sardines on preheated plates, drizzle tomato vinaigrette around, garnish with a lemon slice.
