Ingredients
- 400 g giant shrimp
- 1 piece ginger
- 1 clove garlic
- 3 tbsp cornstarch
- 2 Eggs
- 0.5 tbsp flour
- a pinch baking powder
- Salt
- 200 g white bread crumbs
- 4 tbsp soy sauce
- 2 tbsp sherry
- 1 tbsp hoisin sauce
- oil (for frying)

Peel and finely chop ginger and garlic. Beat the eggs with salt in a bowl. Add ginger and garlic. Stir in cornstarch, flour, and baking powder and let the batter rest for about 15 minutes. Rinse shrimp tails cold, remove the vein, then dip them in the batter and coat with breadcrumbs.

Whisk the dipping sauce ingredients together and season to taste.

Fry the shrimp portions in hot oil until golden brown. Drain and serve with the dip.
