Baked Fish in Paper

Ingredients
- 4 fish fillets (about 180 g each, e.g., Atlantic cod)
- 2 handfuls parsley
- 1 tbsp white balsamic vinegar
- coarse Sea salt
- Pepper
- 1 tbsp Olive Oil
- 500 g cocktail tomatoes (on the stems)

Preheat the oven to 200°C fan.

Rinse and pat dry the fish fillets. Place them on four sheets of parchment paper, each about 30x30 cm. Rinse the parsley, shake dry, remove leaves and roughly chop. Lightly drizzle the fish with balsamic vinegar, sprinkle salt and pepper over it, brush with a little olive oil, then scatter chopped parsley on top. Rinse the tomatoes and place them on the fillets (on the stems). Season lightly with salt and pepper. Fold the parchment paper into packets around each fish and tie with twine or secure with toothpicks. Place the packets on a baking tray and bake in the oven for 15-20 minutes.
