Julienne Vegetable Salad

Raw food finds you boring? Not with the tasty Julienne vegetable salad by Spoonsparrow – crisp, healthy and delicious.
Ingredients
- 3 red bell peppers
- 5 carrots
- 1 cucumber
- 2 kohlrabi
- 3 shallots
- 1 Garlic clove
- 7 tbsp olive oil
- 4 tbsp white wine vinegar
- salt (pepper)
- 0.5 bunch mixed herbs

Halve the bell peppers, remove seeds and wash them. Peel the carrots and kohlrabi. Cut the cucumber lengthwise in half and remove seeds with a teaspoon. Slice all vegetables into very thin strips.

Peel and finely chop the shallots. Mince the garlic clove very finely. Wash, dry shake and chop the herbs. Whisk together olive oil, white wine vinegar, shallots, garlic and herbs. Season heavily with salt and pepper. Toss the vegetables with the vinaigrette and let them marinate for at least 1 hour.
