Fried Potatoes with Shrimp

Ingredients

  • 600 g cooked potatoes (from the day before)
  • 2 Spring Onions
  • 500 g cocktail tomatoes (red and yellow)
  • 400 g shrimp (peeled and deveined)
  • 4 tbsp rapeseed oil
  • 1 tsp Pink peppercorns
  • Salt
  • ground black pepper
  • basil for garnish

Instructions

    Peel the potatoes and cut them lengthwise in half. Wash, trim, and slice the spring onions into fine rings. Wash and halve the tomatoes. Rinse the shrimp and pat dry with kitchen paper.

    Add 2 tbsp oil to a hot large pan (or use two pans simultaneously). Place the potato halves skin-side down and fry for 1-2 minutes until crisp. Flip and lightly brown all sides. Add the peppercorns briefly. Remove the potatoes, add remaining oil, and sauté the shrimp for 1-2 minutes. Add tomatoes and spring onions and cook about 1 minute. Return the potatoes, combine everything, season with salt and pepper, and sprinkle with basil before serving.
