Angus Roast Beef with Fried Potatoes and Green Beans

Ingredients
- 1 kg roastbeef (e.g., Angus)
- Salt
- Pepper (freshly ground)
- 2 tbsp sunflower oil
- 2 tbsp medium-hot mustard
- 1 tsp chili flakes
- 150 g chopped almond kernels
- 800 g green beans
- Salt
- 1 kg cooked potatoes
- 2 tbsp sunflower oil
- 3 tbsp butter
- Pepper (freshly ground)

Preheat the oven to 120°C with fan and top heating.

Season the roast beef with salt, pepper and sear it in hot oil on all sides. Remove from pan and coat all over with mustard. Mix chili flakes with almonds and roll the meat in this mixture. Place on a baking tray and bake for about 45 minutes (longer or shorter to taste).

Wash, trim and blanch the beans in salted water for about 6 minutes until firm. Shock in cold water and drain. Peel and slice the potatoes. Heat oil with 1 tbsp butter in a hot pan and fry the potato slices slowly for about 8 minutes until golden brown. Season with salt and pepper. Toss the beans in the remaining hot butter and season with salt.

Remove the meat from the oven, let it rest briefly, then slice and serve with the potatoes and beans.
