Ingredients

  • 125 g parmesan
  • 300 g flour
  • 4 tsp baking powder
  • salt, pepper
  • 2 Eggs (size M)
  • 125 ml milk and buttermilk each
  • 6 tbsp Olive oil
  • 1 packet 8 herb mix (frozen)

Instructions

    Grate the parmesan finely. Mix the flour with the baking powder, a little salt and pepper. In a second bowl whisk together the eggs, milk, buttermilk, olive oil and herbs. Add the dry mixture and stir in. Fold in 100 g of parmesan.

    Pour the batter into greased muffin cups and sprinkle with the remaining parmesan. Bake in a preheated oven at 200°C (gas: level 3-4, fan: 180°C) for 25‑30 minutes.
