Fried Green Herring

Ingredients

  • 4 green herrings (ready to cook)
  • Salt
  • Pepper (freshly ground)
  • 5 tbsp flour
  • 2 tbsp oil
  • 2 tbsp butter
  • a handful parsley
  • 1 lemon (for garnish)

Instructions

    Wash the herrings inside and out thoroughly, pat dry, season with salt and pepper, then coat in flour. Shake off excess flour.

    Heat oil and butter in a large pan over medium heat and fry the herrings for about 8 minutes, turning until crisp. Wash, shake dry, and finely chop parsley.

    Arrange the fried herrings on plates and garnish with chopped parsley and lemon wedges. Serve with roast potatoes.
