- 8 elderflower blossom clusters
- 1 egg
- 175 ml dry white wine
- 125 g flour
- 1 tbsp sugar
- 1 tsp vanilla sugar
- 0.5 tsp grated orange zest
- 2 tbsp liquid butter
- oil (for frying)
- powdered sugar (for dusting)

Gently shake the blossom clusters in cold water and pat them dry on a kitchen towel. Separate the egg. Whisk the yolk with wine, flour, sugar, vanilla sugar, and orange zest into a smooth batter.

Fold in the butter and let the batter rest for about 20 minutes. Beat the egg white until stiff peaks form and fold it into the batter. Pass each blossom cluster through the batter and fry them one by one in hot oil. Dust with powdered sugar before serving.
