Fried Cod with Spinach

Crispy fried cod fillets served with sautéed spinach and garlic, a fresh dish from the leafy greens category. Try this and other recipes from Spoonsparrow!

Ingredients

  • 4 cod fillets (about 160 g each)
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp flour
  • 4 tbsp olive oil
  • 600 g Spinach
  • 2 Garlic cloves
  • nutmeg

Instructions

    Wash the cod fillets, pat dry and season with salt and pepper. Dredge in flour and fry in 2 tablespoons of hot oil, turning slowly, for 3-4 minutes on each side until golden brown.

    Wash and trim the spinach, then drain. Smash the garlic cloves and sauté them in a hot pan with the remaining oil. Add the spinach, let it wilt, season with salt and nutmeg, and serve with the fish.
