Ingredients
- 25 g butter
- 1 tbsp Olive Oil
- 1 red chili pepper
- 450 g large shrimp (prepped; fresh or frozen)
- 0.25 tsp chili powder
- 20 ml cognac
- 1 tbsp tomato purée
- 3 tbsp finely chopped mixed herbs
- Salt
- ground pepper
- 1 ciabatta (or baguette)
- 3 tbsp liquid garlic butter
- 4 tbsp olive oil
Instructions

Wash the chili pepper, slit it lengthwise, deseed and finely chop.

Heat butter and oil in a pan and sauté the chili for about 2-3 minutes, then add the shrimp and cook over high heat until they turn pink. Sprinkle with chili powder, add cognac, tomato puree and herbs, season with salt and pepper, and finish cooking for another 2-3 minutes.

Meanwhile mix garlic butter with olive oil and spread on bread slices. Roast in a hot oven or under the grill until golden brown.
