Fried Cheese Salad

Ingredients

  • 2 tbsp olive oil
  • 4 tbsp white balsamic vinegar
  • Salt
  • Pepper (freshly ground)
  • pinch of sugar
  • 250 g mixed leafy salad (e.g., lamb's lettuce, frisée, radicchio)
  • 1 large pear
  • 1 tbsp Lemon Juice
  • 500 g firm sheep cheese
  • 100 g flour
  • 1 egg
  • 125 g breadcrumbs
  • Pinch Chili Flakes
  • cooking oil for frying
  • 150 g fresh cranberries
  • 4 tbsp cranberry jam

Instructions

    For the salad dressing whisk the olive oil with the white balsamic vinegar, a little salt, pepper and sugar. Set aside. Wash, trim and tear the leafy salad into bite‑sized pieces. Wash the pear and cut it into wedges. Drizzle with lemon juice.

    Slice the sheep cheese and coat each slice in flour. Beat the egg and mix the breadcrumbs with chili flakes on a plate. Dip the cheese slices first in the beaten egg, then dredge them in the breadcrumb mixture, pressing firmly to adhere. Fry the coated slices in hot oil until golden brown, then drain on paper towels.

    Arrange the salad and pear wedges on a plate, drizzle with the dressing. Place the fried cheese slices on top, scatter the washed cranberries over them, and spoon one tablespoon of cranberry jam onto each piece.
