Ingredients
- 400 g waxy potatoes
- 200 ml vegetable broth
- 1 cucumber
- 4 bell peppers (green and red)
- 4 tomatoes
- 4 tbsp olive oil
- 1 tsp Dried oregano
- Salt
- a splash lemon juice
- coriander (ground)
- Pepper
- 300 g sheep cheese
Instructions

Peel, wash, dice the potatoes and steam them in vegetable broth covered for about 15 minutes.

Peel, clean, halve lengthwise, deseed, and dice the cucumber. Wash, halve, clean, and cut the bell peppers into small pieces. Wash, quarter, deseed, and cube the tomatoes.

Drain the potatoes, reserving the broth. Mix with the prepared vegetables, a bit of broth, olive oil, and oregano, then season with salt, lemon juice, coriander, and pepper.

Serve on bowls and top with sliced feta cheese.
