Asian-Style Seafood Salad

- 200 g pre-cooked squid
- 500 g mixed mussels
- 400 ml fish stock
- Salt
- pepper (ground)
- 250 g mixed leafy salad
- 1 Spring onion
- 1 Garlic clove
- 200 g pre-cooked shrimp
- 4 tbsp soy sauce
- 4 tbsp Lemon juice
- 1 tsp cane sugar
- 3 tbsp sweet and sour chili sauce

Cut the squid into bite-sized pieces. Wash the mussels thoroughly, discard any that are not open. Bring the fish stock to a boil in a pot. Add the squid and simmer for 2-3 minutes over low heat, then remove and set aside. Next, cover the mussels with the broth and cook for 5 minutes until they open, shaking the pot occasionally. Remove the mussels and release the meat; discard any that remain closed.

Wash and dry the salad leaves. Trim and finely chop the spring onion. Peel and finely mince the garlic. Sauté the garlic and spring onion in oil until translucent. Add the shrimp and cook until pink.

Whisk together soy sauce, lemon juice, cane sugar, salt, and pepper; fold in the sweet and sour chili sauce. Distribute the salad leaves into bowls, top with the seafood, and drizzle everything with the dressing.
