Fried Calamari Rings with Avocado Cream

Ingredients
- 2 Avocados
- 1 Garlic clove
- 2 tbsp Lime juice
- 100 g crème fraîche
- Salt
- white pepper
- 100 g white bread crumbs
- vegetable oil (for frying)

Wash and pat dry the calamari rings. Season with salt, pepper, and lemon juice, then coat in flour. Shake off excess flour and dip each ring in beaten eggs. Coat with breadcrumbs and fry in hot oil (~170°C) in batches for 3-4 minutes until golden brown. Drain on paper towels and keep warm at 80°C in the oven until all rings are fried.

Halve the avocados, remove the pits, and scoop out the flesh. Combine with peeled garlic in a blender. Add lime juice and blend until smooth. Stir in crème fraîche and season with salt and pepper to taste.

Serve the finished calamari rings with the avocado dip.
