Avocado Bean Wraps
Simply delicious avocado bean wraps are perfect for lunch or a grab-and-go meal.
Ingredients
- 1 kg fresh green beans (in the pod)
- Salt
- 2 sprigs Mint
- 2 cloves garlic
- 0.5 Organic lemon
- 2 tbsp olive oil
- 30 g sour cream (2 tbsp; 10% fat)
- Pepper
- 4 iceberg lettuce leaves
- 2 small avocados
- 4 whole wheat tortillas

Separate beans from pods and blanch in boiling salted water for about 3 minutes. Drain, shock with cold water, and let drain. Remove beans from skins and place in a tall bowl. Wash mint, shake dry, and pluck leaves. Peel garlic and add to beans with mint. Rinse lemon hot, dry, grate zest, and squeeze juice. Add 1 tbsp lemon juice and oil to beans and blend finely. Finally stir in sour cream and lemon zest. Season with lemon juice, salt, and pepper.

Clean lettuce, wash, and shake dry. Halve avocados, remove pits, scoop flesh, roughly cube or slice, and mix with remaining lemon juice.

Warm tortillas in a non‑fat pan for about 30 seconds each side. Spread bean puree on tortillas, top with lettuce and avocado. Fold bottom edge over and roll tightly from the side. Serve immediately.
