Ingredients

  • 4 eggs
  • 1 bunch chives
  • 1 kg small waxy potatoes
  • 1 onion
  • 3 tbsp clarified butter
  • 50 g smoked bacon (diced)
  • salt (pepper)

Instructions

    Cook the potatoes in their skins for 20 minutes the day before.

    On the next day, peel and cut them into wedges.

    Peel the onion and finely dice it.

    Heat the clarified butter in a heavy pan, add the potatoes and fry slowly, turning only occasionally; finally add the bacon and onions and continue frying, seasoning with salt and pepper.

    Beat the eggs and stir them into the fried potatoes until just set, sprinkle with chives and adjust seasoning with salt and pepper.

    Serve with a fresh green salad.
