Fried Acacia Blossoms

The fried acacia blossoms from Spoonsparrow are always a great idea!

Ingredients

  • 16 fresh acacia blossoms
  • 2 Eggs
  • 2 tbsp whole grain sugar
  • 200 g spelt whole wheat flour
  • 250 ml milk (3.5% fat)
  • Vegetable oil for frying

Instructions

    Separate the eggs; beat the yolks with the whole grain sugar until fluffy. Whisk the whites to stiff peaks. Gradually add the flour and milk while stirring constantly until a creamy batter forms. Fold in the beaten egg whites. Heat plenty of oil in a pot for frying. The oil is ready when bubbles start rising on a wooden spoon handle held in the fat. Dip the acacia blossoms into the batter and fry in hot oil until golden yellow.

    Remove from the oil and drain on kitchen paper.
