Ingredients

  • 125 g digestive biscuits
  • 60 g dried apricots
  • 90 g butter
  • 10 sheets white gelatin
  • 75 g sugar
  • zest and juice of 2 limes
  • 250 ml buttermilk
  • 500 g Low-fat quark
  • 300 g blackberries
  • Lemon balm (for garnish)
  • 1 tsp powdered sugar (to dust)

Instructions

    Break the digestive biscuits into pieces. Chop the apricots finely. Pulse biscuits and apricots in a food processor until fine crumbs form. Add softened butter in small lumps and mix well. Line the bottom of a 24 cm springform pan with parchment paper. Press the biscuit mixture onto the base, smoothing it out. Seal the edges of the pan. Chill for 1–2 hours.

    Soak gelatin for 5 minutes according to instructions. Boil sugar and lime juice vigorously for 2–3 minutes until sugar dissolves, then add lime zest. Whisk together the lime-sugar solution, buttermilk, and quark. Squeeze out excess water from gelatin and dissolve in a saucepan. Stir in 2–3 tablespoons of the quark mixture, then fold into the remaining quark mixture. Refrigerate until the mixture begins to set slightly.

    Rinse the blackberries. Whisk the quark mixture vigorously, spread a quarter of the berries on the tart base, smooth the quark over them. Chill briefly so the quark is not fully firm, then top with the remaining berries. Chill again for 2–3 hours. Remove the springform ring, transfer the tart to a serving platter. Garnish with lemon balm and dust with powdered sugar before serving.
